Yummy & Easy Chicken Enchilladas



Sometimes you find out you are going to have company over at last minute, this is really easy to make from beginning to end, but it also freezes well, so just pull them out, heat, and eat. My husband always begs me to make extras, because he likes to take them to work for lunch so he can torture his work mates. (They do microwave fairly well too!)

Ingredients
  1. 1/3 c sliced green onions
  2. 1 garlic clove minced (or about 1/8 tsp dried minced)
  3. 2 Tbs butter
  4. 4-7 cups shredded, cooked chicken (this depends on how much chicken you have, and whether or not you want any chicken in at all, you could omit it and make more rice)
  5. 1Tbs Chili Powder (I prefer the spicy ones)
  6. 2 1/2c chicken broth, divided
  7. 16 oz picante sauce or salsa
  8. 1 cup minute rice, uncooked (depending on how much meat you want you will need more)
  9. 1/2c sliced ripe olives (opt)
  10. 3 c shredded cheese (cheddar, montery jack, or colby)
  11. 1 c whole kernel corn
  12. 1 Can black beans drained and rinsed (opt)
  13. Flour tortillas slightly warmed
  14. Enchillada Sauce (I really like Ortega)
In a skillet, saute onions, and farlic in butter until tender. Stir in the chicken, chili powder, and the picante/salsa. At the same time cook rice mixing equal parts rice and broth (1c rice, 1c broth=cook 6min. 2c rice, 2c broth=8min) cover and cook on high in the microwave. Let sit 5 min, fluff with a fork. Mix in with chicken mixture. Add olives, corn, 2 c. cheese, and beans if desired. Mix. Open enchillada sauce and place in large bowl, or deep wide plate. Dip a tortilla in the sauce be sure to cover each side, place a small amount of mixture onto tortilla and fold burrito style and place onto a lightly sprayed (with nonstick spray) 13X9 in pan. (***Note: cover inside of dish with foil for easier clean up) Do this with all the tortillas. Drizzle remaining enchillada sauce over enchilladas. Garnish with remaining cheese. Cover and bake 375 degrees for 10-15min til heated through. Serves 4-8

If you have extra chicken/rice mixture it tastes really good on top of baked potatoes.
