Broccoli-Cheese Stuffed Breasts
These we just tried and my husband tasted one bite, then kissed me! My guess was that he enjoyed it! =) I hope your family will enjoy it also!
- 2 boneless chicken breasts, split
- 3 tablespoon butter
- 1/4 cup chopped green onion
- 1 tablespoon lemon juice
- 1/2 cup Monterey Jack cheese (cubed small)
- 1 cup broccoli flowerettes, cut small
- 4 tablespoons Dijon mustard
- 1 teaspoon marjoram
Preheat oven to 375 F. Rinse breast pieces, pat dry. Cut pocket in each breast piece. In saucepan melt 1 teaspoon butter, add green onions. Saute 2 minutes. Remove from heat and stir in 2 teaspoons mustard, add cheese, marjoram and broccoli to mixture and stuff in breast pocket. Seal with toothpick or I like to use a small piece of uncooked spaghetti, then you don't have to remove them. Melt 2 teaspoons butter in baking dish, place the stuffed breasts in dish. Combine remaining mustard, and lemon juice. Bake for 30-35 minutes, basting twice. Drain off all liquids and reserve. Remove toothpicks. Place breasts on serving plate, score 3-4 times with sharp knife and spoon drippings over each. Serves 2
